Slow Cooker Chicken Parmesan
Recipe from A Year of Slow Cooking
Ingredients:
2-4 boneless, skinless chicken breasts (I cut 3 of them in half so I had 6)
1/2 cup Italian seasoned bread crumbs
1/4 cup parmesan cheese
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil
1 egg, beaten
sliced or shredded mozzarella cheese
23 oz. marinara sauce
Directions:
Spread the olive oil into the bottom of your crockpot. Beat the egg with a fork in a separate bowl. Mix the bread crumbs with the seasonings and the parmesan cheese in another separate dish. Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings. Place the chicken breasts in the bottom of the crockpot. Layer 1 slice of cheese or 2 cups of shredded mozzarella cheese. Cover with entire jar of marinara sauce. Cook on low for 6-7 hours or on high for 3-4 hours.

Maybe it's my imagination, but the recipe seems to cut off? I see the part about putting the chicken on the bottom of the crockpot and putting cheese on top of that. But where does the sauce go? Do you just pour it in the crockpot? Seems like the breading would come off the chicken that way.

I just checked and you were right- don't know how that happened!! (Maybe I got distracted and forgot to finish?) Anyway- I fixed it, so thanks for letting me know! I pour the sauce on over the chicken and the breading seemed to stay on pretty good for me. Good luck!

DeleteI wouldn't have thought to do chicken parm in the crockpot. I am always hesitant about chicken breasts in the crock pot because they can easily overcook. The spaghetti sauce would help with that and increase the flavor. Great idea. Thanks for sharing on Thursdays Treasures.
